Greek Yogurt Chocolate Muffins
These Healthy Chocolate Muffins are rich, moist, and made with wholesome ingredients like Greek yogurt, a mix of whole wheat flour and oat flour, and ground flaxseed to provide you with protein, fiber, and feel-good fats to get you started on the right foot for the day ahead!
What You’ll Need:
2 overripe bananas, mashed
1 large egg
1/4 vegetable oil
1/4 cup whole milk
1 tsp vanilla extract
1/3 cup granulated sugar
1 tbsp brown sugar
1 cup whole wheat flour
2/3 cup oat flour
3 tbsp natural unsweetened cocoa powder
1-1/4 tsp baking soda
1/2 tsp salt
1/2 semisweet chocolate chips
Instructions:
Preheat oven to 425. Lightly coat muffin tin with olive or canola oil spray.
In a mixing bowl, combine all of the wet ingredients (banana, egg, oil, milk, vanilla extract, sugars)
In a separate bowl, combine all of the dry ingredients (flour, cocoa powder, baking soda, salt)
Make a hole in the center of the dry ingredients and pour in your wet ingredients. Begin to mix everything together.
Add the chocolate chips and continue to fold together until everything is combined. Be careful to not over mix - you want your muffins to rise!
Bake for 5 minutes at 425.
After 5 minutes, turn oven down to 350 and finish baking for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean!
