Easy Chicken & Sweet Potato Salad

This easy and quick salad can be thrown together in under 10 minutes! It’s a perfect combination of crunchy and sweet while providing you with a variety of nutrients.

What You’ll Need

  • Frozen chicken tenders

  • Frozen sweet potato tots or fries

  • Green Mix (spinach, butter lettuce, etc.)

  • Carrots

  • Cucumbers

  • Tomatoes

  • Onions

  • Bell peppers

  • Feta cheese (or a type you prefer)

  • Honey Mustard Dressing

Instructions

  1. In the air fryer or oven, place chicken tenders and fries, and cook according to package

  2. While that is happening, go ahead and prep your salad with the above ingredients (adding or removing anything you want)

  3. After chicken tenders and sweet potatoes are finished, make your salad

  4. Add cheese and dressing and enjoy

Who doesn’t love a classic tenders and fries!?

I love having chicken tenders and fries just as much as the next person, but what I’ve come to realize by learning how food makes me and my body feel—having those chicken tenders and fries without any fiber, color, or micronutrients—is that I honestly don’t feel my best the rest of the day.

So, something I always keep in mind and what I teach my clients is nutrition by addition. Have what you want to eat (chicken tenders and fries) and add what is going to provide you with nourishing ingredients (vegetables, fiber) to help you feel your very best.

This not only helps you to normalize all foods, but allows you to see you that you don’t have to remove your favorite foods to have a balanced lifestyle.

Side Note: This is not to say you can never just have chicken tenders and fries/tots. It’s about recognizing what you need and how you want to feel in the moment and for the rest of that day. Sometimes, you’ll want just the tenders and fries and that is going to feel good. While other times, adding them to a salad is what will help you to feel good. Nutrition By Addition is more so a guideline rather than a set of rules.
