Cottage Oat Pancakes

These cottage cheese oatmeal pancakes were created with protein and fiber in mind! They are made with only 5 main ingredients and can be stored for an easy meal prep option. Grab yourself a blender and get ready to fuel your day!

What You’ll Need:

  • 1 cup dried rolled oats (you can also use minute oats)

  • 1/2 cup cottage cheese

  • 2 eggs

  • 2 tbsp collagen powder (or protein powder)

  • 2 tbsp ground flaxseed

  • maple syrup

  • milk

Additional Topping Options

  • Greek Yogurt

  • Berries (frozen or fresh)

  • Peanut butter

  • Maple Syrup or Honey

  • Chia seeds

  • Hemp Heart seeds

Instructions:

  1. In a blended, combine all ingredients and blend until smooth

  2. In a pan over medium heat, add pancake mixture to form pancakes to preferred size

  3. Cook on both sides until golden brown

  4. Add to plate and top with preferred options! I love to add Greek yogurt for additional protein, peanut butter for fats, and thawed frozen fruit for micronutrients and fiber!

Notes:

After blending, you can place the batter into the fridge and cook them throughout the week or you can cook and store the pancakes for an easy to grab option during your week!
